How to enjoy mussels

Johanna's mussels

  1. Rinse mussels well and remove seaweed/barnacles/crabs.
  2. Chop garlic and red onion. Pour olive oil into a wok/deep frying pan/pot.
  3. Fry onion and garlic until nice and golden.
  4. Add salt and black pepper and French herbs to taste. Stir.
  5. Pour clean mussels into pot, add generous amount of dry, white wine. Stir and cover.
  6. Leave to simmer for 5 minutes.
  7. Chop parsley, or take out frozen parsley of freezer.
  8. Add parsley to pot, and...., yes - stir! Wait approx. 5 minutes.
  9. Serve with fresh, white bread (although not the strange sweet stuff they sell in Lima) and the rest of the white wine.
